Recipe | Avocado Rice Cakes + 3 Topping Ideas

It's not much of a recipe, but avocados on rice cakes are seriously good! While avocados on whole grain toast may be a breakfast favourite of mine, these avocados on rice cakes are my go-to mid-afternoon snack as of late.

 

I use to hate avocados as a child, but by my teenage years I was loving them in salads and on toast. Now I'm loving them on rice cakes. I pick up the rice cakes from my local Whole Foods store. They are by Kupiec and usually only $2 for a pack of 12. INGREDIENTS

DIRECTIONS

  1. Cut the avocado in half and mash the flesh of each half in the shell.
  2. Scoop the mashed avocado flesh onto each rice cake.
  3. Season as desired (see below for my top 3 ideas!).

TOPPING IDEAS:

  1. NUTRITIONAL YEAST + CAYENNE
    This is my personal favourite combination. I just sprinkle a bit of nutritional yeast for a hint of cheesy flavour and vitamin B12, and cayenne for a little kick of heat. 
     
  2. PLAIN OL' SALT
    Sometimes it's nice to just keep it simple with a quick crack and sprinkle of salt. I personally like to use Himalayan Pink Salt.
     
  3. SUNDRIED TOMATOES + A SPLASH OF BALSAMIC
    For something much more flavourful, I'll chop up a little sundried tomato and mix it with the mashed avocado. After spreading the mix onto the rice cakes, I splash some balsamic vinegar over it.
