Recipe | Avocado Rice Cakes + 3 Topping Ideas
It's not much of a recipe, but avocados on rice cakes are seriously good! While avocados on whole grain toast may be a breakfast favourite of mine, these avocados on rice cakes are my go-to mid-afternoon snack as of late.
I use to hate avocados as a child, but by my teenage years I was loving them in salads and on toast. Now I'm loving them on rice cakes. I pick up the rice cakes from my local Whole Foods store. They are by Kupiec and usually only $2 for a pack of 12. A bit more pricey, but I also like the Lundberg Organic Rice Cakes also available at Whole Foods or Well.ca (use code GET10TC for $10 off your order).

GOOD FOR SNACKING, BREAKFAST
- Cut the avocado in half and mash the flesh of each half in the shell.
- Scoop the mashed avocado flesh onto each rice cake.
- Season as desired (see below for my top 3 ideas!).
- NUTRITIONAL YEAST + CAYENNE
This is my personal favourite combination. I just sprinkle a bit of nutritional yeast for a hint of cheesy flavour and vitamin B12, and cayenne for a little kick of heat.
- PLAIN OL' SALT
Sometimes it's nice to just keep it simple with a quick crack and sprinkle of salt. I personally like to use Himalayan Pink Salt.
- SUNDRIED TOMATOES + A SPLASH OF BALSAMIC
For something much more flavourful, I'll chop up a little sundried tomato and mix it with the mashed avocado. After spreading the mix onto the rice cakes, I splash some balsamic vinegar over it.
That's it! A super simple snack that is incredibly healthy and tasty. If you've given this a try before, let me know what you top your avocado rice cakes with!
