The Weekend Breakfast

Weekends are the days where I find the time to fix myself an extra tasty breakfast. I like to just slow down and catch up on blogs as I eat and sip away a cup of tea. 

 

Avocado toast has been a thing for a while now and honestly, it is good! Just please be careful when dealing with the avocado as I had a nasty accident with the pit removal earlier in the week and now have a thoroughly bandaged up finger. Anyway, I top toasted whole grain bread with sliced avocado, then add a fried egg. I've started cooking with refined coconut oil now and I definitely like it better than virgin coconut oil as for whatever reason, I just never got used to the taste of coconut in all my food. With refined coconut oil, there is no significant coconut taste. 

 

This avocado toast with eggs combination is full of healthy fats and protein which I am all about. Avocado has plenty of good vitamins, potassium, and healthy fats that are good for the heart. Eggs contain protein and if you're like me, you'll get the ones with added omega-3. I put it all on some sort of whole grain bread which is packed with fiber. 

 

On the side I sip on the Teapigs Darjeeling Earl Grey which surprisingly, I was able to find in a Loblaws in Canada. For a tea that isn't organic, it is on the pricey end of the scale but it is very strong and I am able to brew two cups of it with just one tea bag. This is a black tea so it provides a good amount of caffeine to get my day started as well as vitamin A which is great for the skin and hair.
